What is Brown Rice?
Brown rice is un-milled or partly milled rice. The husk of the paddy is being refined, with only outermost rice bran layer, germ and endosperm left.
The rice bran layer is enriched with protein, natural ester, vitamins and high fibre. It can enhance our body metabolism, control fat, neutralize glucose level and detoxify the body system.
Brown rice is formed by complex carbohydrate that provides 15 essential nutrients, including B-vitamins, niacin and potassium. Brown rice is extremely nutritious, thanks to its hull. The hull is full of fiber, vitamin Bs, magnesium, manganese, thiamine and zinc, which is why brown rice is referred as the super food! It is more nutritious than the white rice and bears a mild nutty flavour.
Brown rice and white rice have similar amounts of nutrient such as calories, carbohydrates, and protein. The main differences between the two forms of rice lie in processing and nutritional content.
A whole grain of rice has several layers. During processing, only the outermost layer, the hull, is removed to produce what we call brown rice. This process is the least damaging to the nutritional value of the rice and avoids unnecessary loss of nutrients when processed further.
To produce white rice, layers underneath the husk (the bran layer and the germ) are removed, leaving mostly the starchy endosperm.
One cup (195 g) of cooked long grain brown rice contains 84 mg of magnesium while one cup of white rice contains 19 mg. When the bran layer is removed to make white rice, the oil in the bran is also removed. Rice bran oil may help lower LDL cholesterol.
